The grilling favorite ribeye steak is a product of this section of beef also. Also available is the rib steak, which can also be grilled or broiled. Rib roast and ribeye roast are an easy meal roasted in the oven, for a tender, flavorful entree. Beef ribs are used primarily in barbecue. When German immigrants settled in Texas in the 1800s, they learned barbecue techniques from the Mexican locals. They added some of their own ideas, and came up with their own brand of barbecue. Texas beef barbecue is based on beef ribs. Somewhat tough and fatty, beef ribs are perfectly suited for the long, slow cooking that tenderizes the meat and brings out its rich flavor.
