PLATE There is extra care required in preparing meat from this section as it tends to be a tougher cut of beef. Marinading to tenderize the meat is required for skirt steaks. Flank steak is another cut from this section of beef. It can meet government guildlines for 'lean', based on cooked servings with visibile fat trimmed. It also benefits from marinading for tenderization before grilling or broiling.
